Since 1886, Cafferata, one of America's oldest pasta factories, has been producing quality pasta products. In the early days, Mr. Cafferata delivered a limited selection of fresh pasta by horse and buggy. Now our expanded product lines of cut, extruded pasta and filled pastas are delivered nationwide. The prices have changed over the years but not Cafferata's product integrity; we still use whole natural ingredients with no additives or chemical preservatives. Even our coloring agents like whole leaf spinach (green), tomato paste (red), tumeric extract (yellow) and squid ink (black) are all-natural.

Here, a quick glimpse of some of the pastas we hand- craft for your culinary repertoire. All natural colors and flavors have great integrity which make decorating with Cafferata pasta an artistic adventure. The use of broths, infused oils and butter sauces will maintain the brilliant color and vegetable flavors of our pasta. Pasta rolls may be cut fresh for Fettuccine, Linguine... use them for Lasagna, Cannelloni or for your own Ravioli.

We let our imaginations and taste buds run wild in the development of our spectacular line of filled pastas: Bumblebee Triangolo, is a stunning combination of yellow and black striped pasta and a delectable mushroom filing. Butternut Squash celebrates the season as a filling for Agnolotti made from Confetti colored pasta.

TRIED AND TRUE

Cafferata built its fine reputation on meat and cheese ravioli, tortellini, tortelloni and fresh pasta. These mainstays, along with small ravioli, large mattonelle, oval agnolotti, rectangular panzotti and triangolo continue to be popular with our discriminating customers. Our perfectly light gnocchi, available in classical white and in our 50/50 split of sundried tomato with roasted garlic and rosemary, balances Cafferata's line of hearty, healthful old favorites.
