Southwest Tomato Sauce for Vegans:

1.5 cups

diced tomato

1 cup

diced onion

1 Tb

chopped garlic

1 Tb

chopped jalapeno pepper

1 cup

Water

1 tsp

sugar

1/2 tsp

salt

1/4 tsp

ground cumin

1/8 tsp

ground coriander

1 Tb

chopped cilantro

2 Tb

extra virgin olive oil

 

 

1. In a small sauce pot add all ingredients except olive oil and cilantro.

Bring to simmer and cooked covered for about 12 minutes. Coarsely blend the sauce using a handblender or cuisinart to form a rough puree. Reheat sauce. Whisk in olive oil 'till completely absorbed. Add cook pasta, simmer one minute add cilantro and serve.
