TOMATO SALSA:

ripe tomato

2 Tlb.

diced onion

2 tsp.

white wine vinegar

2 tsp.

diced jalapeno pepper

1 tsp.

chopped cilantro

1/2 tsp.

salt

1/2 tsp.

cumin

1/5 tsp.

coriander

1/4 tsp.

black pepper

 

 

 Mix all ingredients together. Let stand for 30 minutes before using. Toss hot cooked CAFFERATA pasta with salsa and garnish plates with a spoonful of sour cream and cilantro sprigs.
